The stories of La Mère Poulard and Mont-Saint Michel are intimately entwined.
The story behind the biscuit confection is intimately tied to that of Mont-Saint Michel and to one of its emblematic figures, La Mère Poulard.
A legendary cook, La Mère Poulard reminds everyone of the inn on Mont-Saint Michel and the secret of the very special omelettes cooked over a wood fire, the taste of which has delighted gourmet clients from all over the world for more than 120 years.
However, this famous cook was also acclaimed for her delicious biscuits, specifically her traditional sugar crust biscuits.
For more than a century, biscuit-making was restricted to Mère Poulard’s inn, but then expanded around Mont-Saint Michel, finally reaching national and international scales with the founding of the Mère Poulard biscuit and cookies factory in Saint-Etienne-en-Conglès. Today, the Mère Poulard biscuit company carries on the ancestral tradition of that famous cook and offers a line of biscuits rooted in her centuries-old expertise and experience.
