a*pour toi, which translates to a*[present]for you, hope you will enjoy great family time, intense moments of friendship, time to rest and time to love.

We are on a mission to happiness, family time, and today is the day to vanquish Chocolate and gingerbread cake!

CHOCOLATE AND GINGERBREAD CAKE

Coline 9 and Charline, 11, my beloved princesses will be the chefs dedicated to help me out in the making of this simple, efficient and delicious dessert, and probably most, will show me the right way to treat dark chocolate over this journey through sweetness and good taste. Let's see what we have...

What you need: for 8 persons,200g of good quality dark chocolate bar, 120g of gingerbread,2 Pears,40g of plain flour,8 free range eggs,100g of butter,2 soup spoons of sliced almonds (toasted)

Ingredients ready, Taste buds; Ten hut Chefs in the starting blocks, ready Steady! And off we go! Don't forget to preheat your oven 200° C for a good 35 minutes so it is ready when you’ll need it, peal and slice the pears, reduce the gingerbread to powder. Have your melted butter ready.

In a few years time, I’d like to think that Coline and Charline will have a vivid memory of these instants in the kitchen, the wooden spoon dancing an old fashion waltz with the chocolate and a swirl of flour and almonds surrounding us three, laughing, and this little voice begging for a taste of the warm chocolate, finger up asking “Mom please can I have some? Please”...

1. In a large bowl, put together and stir the gingerbread powder , together with the melted butter, 4 eggs, pour the mix into a baking mould  you have previously prepared  having scrubbed the inside with butter and a bit of flour, add the sliced pears all over the preparation.

2.Bake for 15 minutes, and then you’ll have to take it away from the oven to lower the temperature. While the first part is baking in the oven.

3.Prepare the chocolate mousse, keep in mind at this stage that two probably greedy chefs are taking over from you this part of the recipe...

4.Break up the chocolate into small pieces. Have the chocolate gently melted in a bowl over a boiling water pan. Take the 4 eggs that left, separate the whites and yolks In a bowl, pour the yolks and then the chocolate, stir. Pour the whites into the mix, gently stir the beaten egg whites up until you have a smooth and nice chocolate tinted mix. Take the cake off the mould, the temperature has gone down remember, then, put first into the mould some clean film and put the cake all over the mould , pour the mousse on top of the cake,  place the mould into your refrigerator for about a good and solid hour.

5. While waiting, have your sliced almonds toasted. Remove the cake, from the mould, sprinkle the almonds over the cake and serve.
